Sherry casks have added body and depth, and also brought spice and a good helping of fruit notes. The palate is full of boiled sweets, candied peels and honey softness with a creamy, vanilla-rich finish. Midleton Method & Madness Pot Still €0.00 Rich and delicious, notes of leather on the nose hint at the complex oak, nutty toffee and dark fruit flavours. One a single pot whiskey, it is now blended with grain whiskies to give a nicely balanced flavour with shortbread and cereal at the fore. Short and mouth-watering to the finish with a wave of spice and honey at the end. Proper 12 €0.00 MMA fighter and boxer Connor McGregor has stepped into the whiskey making ring with this blended Irish whiskey. Orchard fruit and honey notes are backed up by a kick of white pepper and drying oak heat. Red Spot 15 Year €0.00 Red Spot is a beautifully crafted blend of three different Single Pot Still Irish whiskeys that are matured in three different casks. Olorosso Sherry, Bourbon and Marsala wine casks all bring something to the mix for a nicely balanced and complex whiskey. The Dead Rabbit €0.00 The Dead Rabbit Grocery & Grog n New York City have teamed up with Darryl McNally, master distiller at the Dublin Liberties, to create this excellent expression. The Quiet Man 12 Year €0.00 The 12 Year edition of Quiet Man whiskey is smooth and easy to drink. A nice black pepper spice in the mix builds on the sweet chocolate and orange peel flavours. A little longer in the finish, soft oak and rich honey really round off the whiskey. Tropical fruits on the nose and packed full of fruit on the palate. Lemon curd, caramelised pineapple and dried fruits with a nice prickle of aromatic spice on the finish. Tyrconnell Madeira Cask €8.00 Juicy and fruity with a silky smooth mouthfeel. Delicious flavours of creme caramel, malt and barley sugars and a touch of pineapple that persists to the finish. Smooth, rich and extremely well rounded. Tyrconnell Port Cask €8.00 All of the great, sweet richness of port is present in this expression. A great balance with lots of jammy thickness, tropical fruits and green character. Fruit flavours persist all the way through to a sweet and long finish. Tyrconnell Single malt €5.00 Named for a racehorse that won at 100 to 1 odds in 1876 in The National Produce Stakes, the chestnut colt can still be seen on the label. Incredibly creamy and smooth and incredibly full and smooth on the palate. A dry and grassy finish with a little spice that lingers. West Cork €5.00 Plenty of sweet dessert flavours. Dried fruit, caramel toffee, honey candy, spice, pie crust, grain and a touch floral with some notes of vanilla and oak drifting through. Honied orchard fruit, caramel frosting, toasted grain and an earthy undertone with some bits of malt, vanilla and citrus.
